"Puttu" is a breakfast dish and is very popular in the southern states of India especially Kerala and Tamil Nadu. It is basically steamed rice cake with grated coconut .The thing about puttu is you either love it or don't like it at all . Luckily, everyone in my family loves it .It goes well with many curries most popular being kadala(black chana dal), curry, cheruvayar(green moong dal or horse gram )curry , chicken stew , banana or even sugar .I will post the recipe for the curries in upcoming posts.
For today's post I am posting the recipe of puttu alone.It is also considered a complete power house breakfast. If you have puttu for one meal , it is so filling that you don't have to have anything else for the rest of the day .It is also healthy because it is steamed and there is no oil in the preparation ! The Puttu podi or rice flour used in the preparation is available in most Indian grocery stores .Using the store bought puttu powder (rice powder) makes the puttu preparation easier. However the rice powder also can be also made at home by soaking raw rice for 6 to 7 hours in water and then powdering the drained soaked rice in a food processor.I normally use the rice powder from the store.

Puttu making process with pictures - To make puttu , we need a special cooker or puttu maker . It has two parts to it - one is the bottom vessel which is a steamer where you add water for steaming.The other is a cylindrical compartment for filling the puttu mixture which sits on top of the steamer with a circular partition and pores for letting steam into it .
The rice flour or puttu podi is mixed with warm water and salt till it is wet enough to come together.The grated coconut and rice flour mixture is added alternately and then placed on the steamer with the lid. Once the steam comes out of the pores of the top lid for about 3 to 4 minutes ,push the puttu out of the puttu maker using a pushing rod .The puttu rice cake breaks in the place where the coconut was filled as seen in the picture below.The end product is small little rice cakes which can eaten with curry or even with banana or simply adding a little sugar.

A breakfast dish made with rice powder and grated coconut based on Indian cuisine from Kerala and perfect for breakfast and served with curry or banana .
Ingredients
- 6 cups Puttu Podi (Rice flour)
- 2 cups shredded coconut
- salt to taste
- 4 cups luke warm water
Directions
- Take Puttu podi or rice powder in a large bowl and add salt to it.
- Sprinkle lukewarm water and continue to mix it.
- At the end of mixing , the consistency should be like wet sand to build a sand castle at the beach 🙂
- Take a Puttu maker and fill water in the the bottom container (steamer) and bring it to a boil.
- Fill the top (cylindrical) part of the puttu maker alternately with shredded coconut and 2 tbsp of puttu mixture until it is filled to the very top.
- Close the lid and place it on the steamer.
- Wait for about 8 to 10 minutes until steam starts to come out from the openings or pores of the lid.
- Lift the top portion of the puttu maker out of the steamer by using the wooden handle and push the puttus (rice cakes) out using the pushing stick (as shown in the picture) into a container.
- Puttus are now ready to be served. It is best eaten with kadala (black chana dal) curry, cheruvayar (horse gram ) curry ,chicken stew , banana or even sugar! Enjoy 🙂
