Tomato Soup

Tomato and onion soup or simply  Tomato Soup is a delicious and comforting soup. Soups these days are easily available in stores and can be instantly made using ready-made packets and cans. However,  tomato soup made from scratch using tomatoes, onions, and spices tastes really different and delicious. There’s nothing more satisfying than a nice homemade tomato soup and is worth making.

How to make the Tomato Onion Soup?

It is also very healthy and quite simple to make.  Cooking the tomatoes and onions thoroughly is important so that they can be mashed and strained well. Later cornflour and water mixture is added for thickening the soup. Add peppercorns as desired and depending on your spice toleration. The croutons fried in butter added to the soup is usually loved by kids. It adds a special taste to the soup. There is no added color or spices in this soup except for the pepper and bay leaves.

Tomato Soup

A delicious light starter or appetizer made with tomatoes and onions perfect for lunch or dinner.



It is better to use ripe or overripe tomatoes for this recipe.

Ingredients

  • 6 – 7 large ripe tomatoes
  • 1 large onion
  • 2 bay leaves
  • 2 tbsp black peppercorns
  • 1 tsp sugar
  • salt as required
  • 7 -8 slices of bread cut into small squares
  • 2 tbsp butter
  • 1 -2 tbsp  maida or cornflour (optional) mixed in a little water


Directions

  1. Pressure cook the tomatoes, onions,  and bay leaf with salt.
  2. Once cooled, remove the bay leaves and grind to a fine and smooth paste.
  3. Strain the ground paste into a pan using a strainer.
  4. Add water to the strained tomato onion paste to adjust consistency.
  5. Add sugar and adjust salt as desired.
  6. Add powdered black pepper and let it simmer for a while.
  7. You can optionally add the cornflour or maida mixed in a little water for a thicker consistency.
  8. In a small pan, heat butter and shallow fry the bread squares until brown and keep aside.
  9. Add it to the soup just before serving.
  10. You can also add a little fresh cream if you like.
  11. Serve and enjoy the yummy soup!

      Thank you so much Megala, it is a recipe that I got from my mother and tastes similar to the restaurant style .Although I saw some versions online that used carrots and garlic along with the tomatoes ,that would be another variety I guess!
