Curry Chicken with Coconut milk

I love any dish with coconut  or coconut milk in it . If you have read  my earlier posts , you may know  I’m originally from a coastal state in South India  known for its spices and coconuts and so my affinity to coconut is not something surprising 🙂 I recently had this particular chicken curry at my sister’s  during Christmas holidays and it was simply so delicious . All you need to do is , cook chicken the regular way with tomatoes, onions , ginger garlic and spices but finally add coconut milk to it ! The addition of  coconut milk to the dish, gives the dish an awesome flavor and taste .This can be served with malabar parathas ( a kind of layered wheat bread) ,  appams (soft pancake made with rice and coconut batter) , rotis (wheat bread)  or rice.  It is also a wonderful dish when you have guests at home . Do try it out and let me know how you like it!

I used canned coconut milk here in the US which is a little thick but quite okay .Back home we squeeze out the coconut milk from fresh grated coconut for Indian curries and that is even better.

We do get coconut in the store here but is a lot of work to break it open, grate , blend and extract milk , other option is frozen grated coconut , however canned coconut milk is best for a fast and easy preparation!
