Thai Red Curry Chicken

Today’s recipe is the very delicious and aromatic Red curry chicken based on the Thai cuisine.I had posted the recipe of Thai green curry chicken couple of months ago .Although I make  red curry chicken quite often , was unable to click any pictures (it does sometimes gets challenging cooking and clicking 🙂 ) and so could not post it .Finally I was able to get  it done few weeks back. The recipe of Red Curry Chicken is pretty similar to the Green curry chicken except for couple of ingredients .I normally  use the store bought  curry paste (red curry paste) and so it is very easy  to make and is done pretty quickly all you need is the chicken, coconut milk and chopped vegetables handy. Vegetarians can substitute chicken with Tofu .You could also make the red curry paste from scratch as explained in the recipe below , in the section “For Red curry paste” by simply grinding all the ingredients mentioned and this can even be stored in the refrigerator for future use. The store bought paste is a great rescue if you are short on time, have a sudden craving  and want to make the curry in a jiffy! Hope you will try this out , happy cooking!

Thai Red curry Chicken

A delicious chicken curry made with red curry paste ,coconut milk, bell peppers, basil leaves ,bamboo shoot and kaffir lime leaves, based on the Thai cuisine and perfect for dinners, best served with rice .


  1. 8 oz boneless chicken chopped
  2. 1 red bell pepper sliced
  3. 2 carrots sliced
  4. 5-6 snow peas sliced
  5. 1 inch ginger cut into long thin stripes
  6. 2 tsp kaffir lime leaves finely chopped
  7. 4 -5 shallots chopped
  8. 3-4 Thai red chillies slit length wise
  9. 3-4 garlic sliced into small pieces
  10. 1/2 a cup chopped spring onions
  11. 1 bunch chopped coriander
  12. 1/2 cup basil leaves chopped
  13. 1 can coconut milk
  14. 2 tsp sliced bamboo shoots
  15. salt to taste
  16. 1 tsp sugar
  17. 1 tsp soy sauce
  18. 1 tsp fish sauce (optional)
  19. 3 – 4 tbsp red curry paste (add more if you can tolerate the spice)

To make red curry paste (if not using store bought),roast the coriander,cumin and peppercorns mentioned below and then grind them with rest of the  remaining ingredients  to a smooth paste and store in an air tight container in the refrigerator.

For Red curry Paste

  • 1/2 tsp coriander seed
  • 1 tsp cumin seed
  • 1/2 tsp black peppercorns
  • 1 red bell pepper chopped
  • 4-5 red Thai  chilies
  • 1 stalk lemongrass chopped
  • 1  Tbsp fresh ginger or galangal
  • 3 cloves garlic
  • 1 Tbsp fresh turmeric
  • salt to taste
  • 3 Tbsp lemon juice
  • 1 lime
  • 6 green onions sliced
  • 1/2 cup diced shallot
  • 2-3 Tbsp oil
  • 1 Tbsp  maple syrup or coconut sugar


  1. Heat oil in a  pan
  2. Add the chopped shallots,ginger ,garlic, spring onions and sautée
  3. Next add bell pepper, snow-peas and carrots
  4. Stir fry for about 6 -7 minutes.
  5. Add the red curry paste ( add more if you can tolerate the spice).
  6. Fry till you get a nice red color  and then add soy sauce and fish sauce (if using)
  7. Next add chicken and fry well.
  8. Add bamboo shoots, kaffir lime leaves and  chopped basil
  9. Add salt and sugar.
  10. Cook covered until chicken is well done.
  11. Finally add coconut milk and simmer .
  12. For a thicker consistency , keep boiling for a while
  13. Garnish with chopped coriander and basil leaves.
  14. Serve this delicious aromatic curry with white rice !
