This is a very simple, homely and regular side dish made with cauliflower and potatoes .I make it at least once a week at my home. This can be also made in combination with peas, carrot or bell pepper and it gives a different flavor with every variation of vegetable used in the dish. The spices , tomato, ginger and garlic gives it a nice tangy taste as well. This delicious side dish goes well with any kind of bread, ‘rotis’ or rice .Let me get straight to the ingredients and the recipe .Enjoy!
A simple, homely side dish made with cauliflower , potatoes and Indian spices that goes well with bread , roti, naan or rice
- 1 large cauliflower cut into florets
- 1 medium onion diced
- 2 medium potatoes cubed
- 2 small Thai green chillies slit
- 1 medium Tomato diced
- 1 tbsp Ginger garlic paste
- 1/2 tsp Turmeric powder
- 1 tsp Kashmiri red chilly powder
- 3 tsp Coriander powder
- 1 pinch Dry mango powder
- 1/4 tsp Garam Masala powder
- 1 tsp Salt
- 1 tsp Cumin seeds
- pinch of Asafoetida
- 2 tbsp Vegetable oil
- 1/2 cup coriander leaves chopped
- 3-4 curry leaves
In a deep bottomed pan, heat oil
Add cumin and asafoetida.
Add onions and green chillies and sautee well.
Add ginger garlic paste and sautee till the raw smell goes away.
Add the diced tomatoes and sautee till it leaves oil from the sides.
Add the spices turmeric, red chilly powder, coriander powder, dry mango powder and garam masala and mix well.
Add the potatoes , cauliflower , salt and coat them together with spices .
Close with a lid . Cook on medium heat till it is well done.Add curry leaves if desired.
Garnish with chopped coriander leaves.
Cauliflower and Potato with spices is ready to be served!
