Rajma Masala (Kidney beans gravy)

Rajma Masala (kidney beans gravy ) is a very popular delicious, aromatic vegetarian dish  made with kidney beans in a gravy of tomato and onion sauce .This dish is abundantly rich in proteins ,minerals, iron and folate goes best with rice and is an absolute comfort food . It can be made with the canned beans or by soaking the dried beans over night. I used the light kidney beans soaked over night for making this dish . It is very important that the beans is well cooked , simmered, soft and infused with all the mentioned spices in the recipe for the authentic taste. Please read on for the full recipe .

A delicious and nutritious dish made with Kidney beans cooked in a gravy of onion, tomato and spices which goes best with rice or rotis.

  • 2 cups Kidney beans soaked over night
  • 1 cup onion finely chopped
  • 1 cup tomato finely chopped
  • 2 green chillies slit
  • 1 tbsp ginger garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp Kashmiri red chilli powder
  • 3 tsp coriander powder
  • 1/4 tsp garam masala powder
  • 1/4 tsp amchur (dry mango powder)
  • 1 cup coriander leaves chopped for garnishing
  • 1 inch ginger julienne cut for garnishing
  • 1 tsp salt
  • 1 tsp cumin seeds
  • 3-4 cloves
  • 1/2 inch cinnamon
  • 3 tbsp vegetable oil
  1. Soak the kidney beans in plenty of water overnight

  2. In a pressure cooker add  the oil

  3. Add cumin seeds, cloves, cinnamon 

  4. Add chopped onions and sautee well

  5. Add ginger garlic paste and sautee till the raw smell goes away

  6. Add chopped tomatoes and sautee until it leaves oil from the sides

  7. Add all the spices turmeric, chilli, cumin, coriander, amchur  powders , garam masala and salt

  8. Add the soaked kidney beans and mix well

  9. Add enough water and pressure cook for 15 to 20 mins or for about 4 whistles

  10. When pressure releases , simmer for another 10 mins  

  11. Add chopped coriander leaves and ginger for garnishing.

  12. Rajma is ready, Serve with rice or rotis.

    Looks like a flavorful dish Nisha! If red chili powder and the dry mango powder were not added to the dish, would this affect the taste of the dish significantly? Thank you! 🙂
