These delicious banana nut muffins are very quick and easy to make. They just need a handful of ingredients . They make a healthy , tasty and quick snack or breakfast on the go especially for the busy days . The best part of home made muffins is no preservatives !You can add chocolate chips if you like . Since there was a demand for both varieties at my home , I made some of of them without the chocolate chips by adding it in the batter after the muffin trays with batter and nuts only were filled . The joys of the aroma that fills the home while baking these delicious muffins is really awesome . Addition of coffee in this recipe is optional and you can skip it if you don’t like the taste.Hope you are inspired to try this quick and easy muffins.Enjoy!
Delicious , quick and easy muffins which are healthy and make a quick breakfast or snack and loved by one and all
- 1 1/2 cups all purpose flour
- 1 pinch salt
- 1 tsp baking soda
- 2 to 3 ripe bananas (about 1 cup mashed)
- 1/3 cup butter melted
- 3/4 cup sugar
- 1 large egg beaten
- 1 tsp vanilla extract
- 1 pinch intsant coffee mixed with 1 tbsp water
- 1 cup chopped walnuts toasted or raw
Line a muffin tray with cupcake liners.Preheat the oven to 350°F.
Mash the bananas nicely in a large bowl.
Add the melted butter to the bananas and mix well.
Add in the sugar, egg, coffee and vanilla extract and mix well.
Whisk together the flour, baking soda, and salt.
Add the flour mixture to the banana mixture a third at a time.
Stir until incorporated. Take care not to over-mix ,otherwise you will end up with dense and hard muffins.
Fold in the chopped walnuts or pecans or chocolate chips . You can add whatever you like.
Spoon the mixture into the muffin tray. Bake at 350°F for 20-25 minutes.
Check if it is done by pressing on the muffin. If it bounces back , it’s done. You can also check by inserting a skewer into the center of a muffin and checking if it comes out clean.
Cool on a rack.
Muffins are ready to be enjoyed!
