Carrot Halwa or Pudding is a delicious dessert for any occasion or celebration.This is usually loved by one and all and very simple to make. We all know the great benefits of carrots. It is also a good way to get picky kids and eaters to have carrots in their diet .
Reducing the milk in the microwave for this recipe, is a trick I recently got to know .It not only saves the cooking time and mess, but also avoids baby sitting the carrots and milk while cooking .It is also the best away to avoid the carrots from getting completely mushed up. So if you have some carrots and milk lying aside do try out this delicious dessert and impress your holiday guests .Hope you all have been having a great holiday season .It has been a busy time at my end as well and hoping to blog more often.

A delicious dessert made with grated carrots, milk and sugar
- 2 cups shredded carrot
- 2 cups milk
- 3 tbsp unsalted butter
- ¼ cup granulated sugar
- 1 pinch cardamom powder from 3 to 4 pods
- 12-14 cashew bits and almonds chopped
Microwave milk in a microwave safe bowl for about 20 minutes and reduce it .Check every 5 minutes .
Roast cashews and almonds and set them aside.
In a heavy wide pan ,heat the butter and saute the shredded carrots for 10 minutes or until they become soft and change color .
Add the reduced milk and cook for another 10 minutes until most of the milk is absorbed.
Add the sugar and cardamom powder and keep stirring until the butter leaves the sides of the pan.
Garnish with chopped nuts .The Carrot Halwa (pudding) is ready to serve .
