Veggie Burrito Bowl Chipotle-style is a very easy, tasty, and healthy DIY dish to make. It is a perfect and inviting meal, especially in the warm weather, with a combination of many fresh vegetables. The blend of all the wonderful individual side dishes is what really makes it irresistible. For those who are not familiar with Chipotle, it is an international chain of fast-casual restaurants, Chipotle Mexican Grill Inc. They are famous for their healthy and fresh choices of dishes like burritos, tacos, chips, and salads.
The main sides that are usually present are the lime rice, salsa, roasted corn salsa, guacamole, pinto or black beans, grilled fajita veggies, sour cream, shredded cheese and lettuce . You can add spicy salsa or chips on the side if required .The main effort involved in making this dish is the chopping of all the veggies.The preparation of lime rice , beans, salsa and grilled fajitas is very simple .The recipes are compiled below .Once all the sides are ready , serve the choices of your liking into a bowl and enjoy!


A healthy vegetarian burrito bowl with lime rice, black beans, guacamole, salsa, sour cream and cheese .
- 2 cups Basmati Rice
- 3 ½ cups Water
- 2 Bay leaves
- 2 tbsp Lime juice
- 2 tbsp Lemon juice
- 2 tbsp oil
- 1 tsp salt
- 1 ½ cups chopped coriander leaves or cilantro chopped very finely
- 1 can Black beans with the liquid in the can
- 2 cloves garlic chopped very finely
- ½ tsp oregano
- 1 tsp chipotle pepper or red chilly powder
- ½ tsp cumin
- ½ tsp salt
- 1 green bell pepper cut into long thin strips
- 1 red bell pepper cut into long thin strips
- 1 red onion cut into long thin strips
- 1 tsp oregano
- 1 tsp red chilly flakes
- 1 tsp salt or to taste
- 1 onion chopped finely
- 5 tomatoes diced into small pieces
- 1 cup coriander leaves or cilantro chopped finely
- 1 jalapeno chopped finely
- 1 tbsp lime juice
- 1 tbsp lemon juice
- 1 tsp tsp salt
- ½ tsp black pepper
- 1 clove garlic chopped fine
- ½ tsp cumin
- 3 ripe avocado chopped or mashed
- 1 large tomato chopped
- ¼ white onion chopped
- 1 tbsp lime juice
- 1 clove garlic
- ½ tsp salt
- ½ tsp pepper
- 1 cup frozen or fresh corn roasted
- ¼ onion chopped
- 1 serrano pepper
- 2 tomatoes chopped
- ½ cup cilantro chopped
- 4 cups lettuce chopped
- 1 cup sour cream
- 1 cup shredded cheese
Wash the rice well and keep it aside .
In an instant pot or rice cooker , add water as per instructions along with rice,salt ,oil and bay leaves .
Once cooked , fluff up the rice with a fork .
Add lime and lemon juice ,remaining oil and chopped cilantro .
Mix well .It is ready to serve .
Combine black beans with all the liquid in the can, garlic and spices in a sauce pan.
Cook for about 10 minutes until well done .
Mash or chop the Avocado into a bowl .
Add all the chopped ingredients and mix well.
Add oil in a pan .
Saute all the veggies.
Add the spices ,salt and cook until it is a bit charred.
combine all the chopped ingredients with spices and mix well.
Roast the corn and slice all the corn out of the cob.
Add the chopped veggies ,spices, salt and mix well .
In a large bowl, serve all the individual items as you like .
Mix well and enjoy the dish.Serve with chips on the side .
You can substitute white rice with brown.
