Creamy chicken Alfredo Pasta

Creamy Chicken Alfredo Pasta is a wonderful meal when you want to indulge in homely, comfort food. The satisfaction of having this delicious meal is like no other. This dish can be quite rich and most folks are calorie conscious these days. So indulging once in a while with portion control in mind may be preferable. We love pasta at home and it is usually a choice for kid’s lunch boxes and weekend dinners. It is a wholesome meal as it is rich in carbohydrates, fiber, protein, and vitamins. Add steamed vegetables like broccoli to enhance the nutritional value of the dish.

How I made Creamy chicken Alfredo pasta :

You can use Penne, Farfalle, Fettuccine, or any other similar pasta of your choice for this recipe. As for cooking pasta as always boiling with saltwater and a drop of oil is preferable. Cook it al-dente as in the instructions of the packet, which is usually 10 to 12 minutes. Rinse it in cold water so it stops cooking after that. To make the Alfredo sauce quickly, add all-purpose flour, butter, and milk. Cook it till it thickens. However, to make it rich, add heavy whipping cream and cream cheese. The sauce can also be flavored with chopped garlic, garlic powder, pepper, and dried oregano.

Chicken preparation for Creamy chicken Alfredo pasta :

The boneless chicken breast is a good choice for this dish. Place it in a ziplock bag and pound it well to flatten it up. This helps in even and easy cooking. Later rub the chicken fillet with black pepper powder, garlic powder, chili flakes, and salt. Keep it refrigerated for about an hour for marination back in the plastic bag.

A rich and delicious pasta in creamy Alfredo sauce with grilled chicken on the side and served with garlic bread which makes a nice comforting meal.

  • 5 cups Penne pasta
  • 10 cups water
  • 1 tsp salt
  • 1 tsp oil
Alfredo sauce
  • 2 tbsp butter
  • 4 tbsp all-purpose flour
  • 2 cups milk
  • 1/2 cup heavy whipping cream
  • 2 tbsp cream cheese
  • 2 tsp chopped garlic
  • 1/4 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper powder
  • 1 tsp salt
  • 1/4 cup grated parmesan cheese
  • 3 tbsp mozzarella cheese
Grilled chicken
  • 1 boneless chicken breast
  • 1 tbsp oil
  • 1 tbsp black pepper powder
  • 1 tsp salt
  • 1/2 tsp garlic powder
Garlic bread
  • 1 French bread or Ciabatta bread
  • 1/2 cup butter melted
  • 3-4 garlic cloves minced
  • 2 tbsp minced parsley
  • 1/4 tsp garlic salt optional
  • 1/2 tsp salt or as desired
To make Pasta
  1. Bring water to boil in a large pan with a little salt and few drops of oil.

  2. Add Pasta and cook till it is al-dente.

  3. Drain into a colander and run it in cold water to stop cooking process and keep aside.

To make Alfredo sauce
  1. In a pan heat up the butter fry chopped garlic and keep aside .

  2. Add about 3 tbsp of all-purpose flour to the butter and saute well.

  3. Add the remaining all-purpose flour to 1/4 cup of cold milk and stir well so it is lump free.

  4. Pour the milk mixture into the pan along with rest of the milk and bring it to a boil till it thickens.

  5. Add whipping cream, cream cheese and sauteed garlic, black pepper, oregano and salt and cook well

  6. Once it is cooked well and of the right consistency you like , add the cooked pasta .

  7. Add shredded mozzarella cheese just before switching off the heat .

  8. Garnish with shredded parmesan cheese.

  9. Serve with grilled chicken, garlic bread or a salad.

To make grilled chicken
  1. In a heavy cast iron skillet or deep bottomed pan heat up some oil.

  2. Add the chicken breast and cook on both sides till it is well done.

  3. Later cut it up into small pieces and serve along side the pasta or mix it in the alfredo sauce .

To make garlic bread
  1. Add melted butter, chopped garlic, parsley and garlic salt in a small bowl and mix well.

  2. Lather this mixture onto the bread generously .

  3. Heat up the oven to 350 deg F.

  4. Bake for about 8 to 10 minutes .You can broil for 2 minutes to get a nice browned top.

  5. Serve the Pasta with chicken and garlic bread on the side .

    Now Nisha, this one isn’t fair! Chicken alfredo pasta is my all-time favorite comfort food and you have knocked this recipe out of the park. YUM!! There is something so cozy and inviting about enjoying dishes like these when the weather cools down. I love what you said about placing the chicken in a zip-loc bag to tenderize and flatten it for even cooking. That’s a great tip!

    When you talked about seasoning the sauce with chopped garlic, garlic powder, pepper, and dried oregano, you really had me sold! 😀 I also love the idea of adding broccoli (another favorite here) to up the nutritional content.

I got that tip of flattening the chicken in a Ziploc bag from a TV cooking show and have been following it since then. It really helps with cooking the chicken evenly.
