Cauliflower and Potatoes with spices

A simple, homely side dish made with cauliflower , potatoes and Indian spices that goes well with bread , roti, naan or rice

Servings: 6 peole
Ingredients
  • 1 large cauliflower cut into florets
  • 1 medium onion diced
  • 2 medium potatoes cubed
  • 2 small Thai green chillies slit
  • 1 medium Tomato diced
  • 1 tbsp Ginger garlic paste
  • 1/2 tsp Turmeric powder
  • 1 tsp Kashmiri red chilly powder
  • 3 tsp Coriander powder
  • 1 pinch Dry mango powder
  • 1/4 tsp Garam Masala powder
  • 1 tsp Salt
  • 1 tsp Cumin seeds
  • pinch of Asafoetida
  • 2 tbsp Vegetable oil
  • 1/2 cup coriander leaves chopped
  • 3-4 curry leaves
Instructions
  1. In a deep bottomed pan, heat oil

  2. Add cumin and asafoetida.

  3. Add onions and green chillies and sautee well.

  4. Add ginger garlic paste and sautee till the raw smell goes away.

  5. Add the diced tomatoes and sautee till it leaves oil from the sides.

  6. Add the spices turmeric, red chilly powder, coriander powder, dry mango powder and garam masala and mix well.

  7. Add the potatoes , cauliflower , salt and coat them together with spices .

  8. Close with a lid . Cook on medium heat till it is well done.Add curry leaves if desired.

  9. Garnish with chopped coriander leaves.

  10. Cauliflower and Potato with spices is ready to be served!
