Bhatura - Deep fried bread

A delicious deep fried bread made with all purpose flour and best paired with chick peas gravy .

  • 2 cups All purpose flour
  • 1 1/2 tbsp semolina
  • 1 1/2 tsp sugar
  • 1/2 tsp salt or to taste
  • 2 tbsp vegetable oil
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda or about 2 pinches
  • 1 1/2 tbsp oil for kneading
  • 1/2 cup yogurt plain at room temperature
  • 4 tbsp milk or as needed for dough
  • 2 cups oil for deep frying
  1. In a bowl whisk All purpose flour , semolina, baking powder, baking soda, sugar and salt .

  2. Add the oil for kneading and evenly distribute with your fingers into the dough .

  3. Next add yogurt and mix .

  4. Add milk a little at a time.

  5. Using stand mixer , knead for about 6 minutes or about 10 minutes with your hand . The longer you knead will make it soft . You can add extra flour if it gets sticky .Knead until you get a smooth dough.

  6. Add a little oil on the dough , cover with a wet cloth and keep in a warm place.

  7. After about an hour divide the dough into 8 balls and let it rest again.

  8. Heat oil in a frying pan . Roll the dough ball into a circle or oval shape and deep fry till it puffs up .

  9. Delicious bhatura is ready to be served with chole .
