Lauki Kofta

A delicious and rich tomato onion gravy with bottle gourd dumplings that goes well with rice and bread .

For Kofta
  • 2 cups bottle gourd peeled and grated
  • 1 tsp yogurt
  • ¼ cup coriander leaves chopped
  • 1 cup chikpea flour (besan)
  • ¼ cup rice flour
  • ¼ cup bread crunbs optional
  • 1 tsp grated ginger
  • ¼ tsp turmeric powder
  • 1 pinch baking soda
  • 2 tsp coriander power
  • 2 tsp red chilli powder
  • 1 tsp salt or to taste
For Gravy
  • 1 big onion
  • 2 medium tomatoes
  • 2 tsp tomato paste optional
  • ½ inch ginger
  • 4-5 garlic
  • 10 cashews
  • 1 tsp chili powder
  • ½ tsp turmeric powder
  • ½ tsp cumin powder
  • 1 tsp coriander powder
  • ¼ tsp amchur powder (dried mango powder)
  • ¼ tsp garam masala
  • ¼ stick butter
  • 2-3 tbsp whipping cream
  • ½ tsp dried fenu greek leaves powdered
To make Koftas
  1. Peel and grate the laukis into a bowl.

  2. Add a pinch of salt so it leaves out all the water , strain it well and use the drained water in the gravy later.

  3. To the grated bottle gourd , add all the ingredients mentioned in the "For Koftas" section.

  4. Mix well and add more chickpea flour or rice flour if the dough gets sticky .

  5. Grease a little oil on your palm and make smooth round balls with the dough.

  6. Shallow fry in the appe-pan with oil and cook well until they are well done.

  7. Drain on to a bowl lined with paper towel and keep aside.

To make gravy
  1. In a deep bottomed pan ,heat oil or butter

  2. Add chopped onions , tomatoes, ginger , garlic and cashews.

  3. Saute well till it is softened.

  4. Grind to a fine paste .

  5. Heat oil and add all the spices , tomato onion paste and canned tomato paste if using.

  6. Adjust consistency to get a smooth gravy .You can use the water drained from the grated bottle gourd here if you like.

  7. Add the koftas into the gravy and cook on medium flame till they are coated well.

  8. Add cream and dried fenu greek leaves.

  9. Garnish with chopped coriander leaves.
