Shahi Paneer

Rich and delicious Paneer rightly named Shahi that exudes royalty

Ingredients
To Boil
  • 1 onion prefer white onion chopped into big pieces
  • 8-10 almonds remove skin after boiling
  • 8-10 cashews
  • 3-4 big garlic pods
  • 1 inch ginger
  • 2 cups water
Other ingredients
  • 1 pinch saffron
  • 1 tsp salt or to taste
  • 1 tsp sugar or to taste
  • ½ cup yogurt whipped well
  • 1 tsp coriander powder
  • ½ tsp kashmiri chilly powder
  • ¼ tsp turmeric reduce if you want a whitish look to the gravy
  • ¼ tsp cardamom powder
  • ¼ tsp garam masala
Whole spices
  • 1 bay leaf
  • 2-3 cloves
  • 2-3 green cardamoms
  • 1 black cardamom
  • 1 inch cinnamon
  • ½ tsp shahi jeera
  • 2 tbsp ghee or oil
  • 2 - 3 cups paneer chopped ,cubed or cut into triangles
Instructions
  1. Boil all the ingredients mentioned in the to boil section for about 10 to 15 minutes until they are soft .

  2. De-skin the almonds and strain the boiled contents into a bowl .Let it cool

  3. Grind the contents to a fine paste

  4. Heat oil or ghee and add the whole spices

  5. Add the ground paste and cook until it leaves oil from the sides

  6. Add the spiced powders ,salt and sugar

  7. slowly add in the yogurt and stir continuously

  8. Add milk or cream and incorporate well

  9. Add paneer and mix well

  10. Add crushed saffron strands

  11. Simmer for a while .

  12. Shahi paneer is ready to be enjoyed with white rice or rotis
