Instructions
Cilantro Lime Rice
Wash the rice well and keep it aside .
In an instant pot or rice cooker , add water as per instructions along with rice,salt ,oil and bay leaves .
Once cooked , fluff up the rice with a fork .
Add lime and lemon juice ,remaining oil and chopped cilantro .
Mix well .It is ready to serve .
Black Beans
Combine black beans with all the liquid in the can, garlic and spices in a sauce pan.
Cook for about 10 minutes until well done .
Guacamole
Mash or chop the Avocado into a bowl .
Add all the chopped ingredients and mix well.
Grilled Veggies Fajitas
Add oil in a pan .
Saute all the veggies.
Add the spices ,salt and cook until it is a bit charred.
Mild salsa
combine all the chopped ingredients with spices and mix well.
Roasted Corn salsa
Roast the corn and slice all the corn out of the cob.
Add the chopped veggies ,spices, salt and mix well .
Serving Instructions
In a large bowl, serve all the individual items as you like .
Mix well and enjoy the dish.Serve with chips on the side .
Notes
You can substitute white rice with brown.
