Instructions
Let the cream cheese soften and be at room temperature.
Chop the peppers and green onions finely.
Shred the carrots and grate the cheese and keep aside.
Take the softened cream cheese into a bowl.
Add all the veggies and spices and mix well.
Heat the tortilla on both sides; this is optional.
Spread the filling generously and make sure to cover all the ends.
Start rolling from one end tightly and come to the very end and seal it with a little filling.
Use a cling wrap and cover it tightly. Refrigerate it for about 30 minutes.
Using a serrated knife, cut the wraps into bite-sized pinwheels.

Finely chop or julienne the vegetables so the wraps roll up neatly and are easier to slice.
If possible, use a block of cheddar cheese and grate it instead of using the store-bought shredded one.
Heating the tortillas is not a necessary step, but it will help get nice brown spots and prevents it it from cracking when rolling.
Make sure the filling reaches the edges of the tortilla; this helps the roll-ups stick together and hold their shape.
Wrap the rolls tightly in cling wrap and refrigerate for at least 20–30 minutes before cutting. This makes cleaner, more even slices.
Cut off the ends when cutting into pinwheel shapes so that they are all uniform.
Use a mix of colorful vegetables and, if available, different colored tortillas to make the roll-ups look bright and appetizing.
These roll-ups can be served cold, making them perfect for preparing ahead of time. Slice them just before serving for the best presentation.
Feel free to customize the filling with ingredients you enjoy, such as shredded chicken, lettuce, cheese, or spreads, to make the recipe your own.
