Bhindi Alu (Okra with Potatoes)
Bhindi Alu is a mouth-watering and delicious vegetarian dish with okra and potatoes based on North Indian cuisine and perfect for dinner served with rotis (bread) or rice.

Ingredients

okra
slit and cut lengthwise ( about an inch size)
½
onion
chopped finely

potato
cut lengthwise

tomato
diced (optional)

tbsp
ginger garlic paste
2
green chillies
1
tsp
chilly powder
½
tsp
turmeric powder
2
tsp
coriander powder
½
tsp
amchur (dry mango) powder
or Tava Fry masala

bunch
coriander leaves
chopped

cumin

pinch
asafoetida

garam masala

Instructions
Heat 3 tbsp oil in a deep bottomed pan
Add cumin seeds and let it splutter
Add asafoetida, onions and green chillies and sautée for a while
Add 1 tbsp ginger garlic paste
Add diced tomatoes and cook well (optional)
Add all the spiced powders turmeric, chilly, coriander and dry mango (amchur) powders
Mix it well, add the potatoes fry for about 2 to 3 minutes
Next Add okra, fry it for a while until combined wellAdd salt to taste
Close the lid and cook on low steam
Make sure to open the lid and keep stirring in between so that it does not get slimy and overcooked
After it is cooked, sprinkle garam masala(optional)Add chopped coriander leaves
Serve with Rotis or phulkas or rice! Enjoy :)
