Bhindi Alu (Okra with potatoes) is a delicious recipe that I learnt a long time ago and among one of the first few recipes that I made when I was still in school. Bhindi (okra or lady's finger) is one of my favourite vegetables as well. This recipe uses dry mango powder along with the other regular spices and is a dry sabzi. To avoid/reduce the sliminess of okra wash it well and dry thoroughly using a paper towel. The potato in the dish is optional and you can just make it with okra only as well.
Bhindi Alu (Okra with Potatoes)
Bhindi Alu is a mouth-watering and delicious vegetarian dish with okra and potatoes based on North Indian cuisine and perfect for dinner served with rotis (bread) or rice.

This looks awesome! But where do you get dried mango powder??!
InspiresN
Hi Melissa, Thank you! You can easily get dried mango powder also called "amchur" in any Indian grocery store. Even if you skip this ingredient it will still turn out good.It just gives a little sour and tangy taste!
