Bhindi Alu (Okra with potatoes) is a delicious recipe that I learned a long time ago and among one of the first few recipes that I made when I was still in school. Bhindi (okra or lady's finger) is one of my favorite vegetables as well. This recipe uses dry mango powder along with the other regular spices and is a dry sabzi. To avoid/reduce the sliminess of okra wash it well and dry thoroughly using a paper towel. The potato in the dish is optional and you can just make it with okra only as well.

Ingredients needed
- okra slit and cut lengthwise
- onion diced
- potato cut lengthwise
- tomato diced (optional)
- ginger garlic paste
- green chilies
- Spices - chilly powder, turmeric powder coriander powder amchur (dry mango) powder, cumin, garam masala, asafoetida
- coriander leaves chopped
- salt to taste
How to make Bhindi Alu (Okra with Potatoes)?
Make sure to wash and dry the Okra with a paper towel. Cut into inches and split on the top so all spices can get in while cooking. Add cumin seeds to a pan with heated oil and let it splutter. To this add asafoetida, onions, green chilies, and sautée for a while. Next, Add a tablespoon of ginger garlic paste. You can add diced tomatoes (optional).
Add all the spiced powders turmeric, chilly, coriander, and dry mango (amchur) powders. Mix it well, add the potatoes fry for about 2 to 3 minutes. Next, Add okra, and fry it for a while until combined well. Add salt to taste. Close the lid and cook on low steam. Make sure to open the lid and keep stirring in between so that it does not get slimy and overcooked. After it is cooked, sprinkle garam masala(optional)Add chopped coriander leaves. Serve with Rotis or phulkas or rice.

- 1 lb okra slit and cut lengthwise ( about an inch size)
- ½ onion chopped finely
- 1 large potato cut lengthwise
- 1 tomato diced (optional)
- 1 tbsp ginger garlic paste
- 2 green chillies
- 1 tsp chilly powder
- ½ tsp turmeric powder
- 2 tsp coriander powder
- ½ tsp amchur (dry mango) powder or Tava Fry masala
- 1 bunch coriander leaves chopped
- 1 tsp cumin
- 1 pinch asafoetida
- ¼ tsp garam masala (optional)
- 1 tsp salt
Instructions
- Heat 3 tbsp oil in a deep bottomed pan
- Add cumin seeds and let it splutter
- Add asafoetida, onions and green chillies and sautée for a while
- Add 1 tbsp ginger garlic paste
- Add diced tomatoes and cook well (optional)

Hi Melissa, Thank you! You can easily get dried mango powder also called "amchur" in any Indian grocery store. Even if you skip this ingredient it will still turn out good.It just gives a little sour and tangy taste!
