Ingredients you will need

- Okra slit and cut lengthwise preferred, but you can also cut into 1-inch lengths and have no slits. They should be washed and dried well before cutting.
- Veggies: diced onions, potatoes cut lengthwise, slit green chilies, chopped coriander leaves, and optionally diced tomatoes (you can skip the tomatoes if you prefer, since the dish already gets its tang from amchur or tava fry masala).
- Ginger garlic paste
- Spices - red chili powder, turmeric powder, coriander powder, cumin, garam masala (optional), and asafoetida (optional). Use either amchur (dry mango) powder or store-bought tava fry masala.
- Salt to taste and oil.
How to make Bhindi Aloo?
Start by heating oil in a pan and adding cumin seeds, allowing them to splutter. Add asafoetida(optional), onions, and green chilies, then sauté until the onions soften.

- Step 1: In a pan, heat oil, add cumin, garlic, and green chilies.

- Step 2: Add chopped onions and sautee.
Mix in the ginger-garlic paste and cook briefly. Next, add the spice powders-turmeric, chili, coriander, and dry mango (amchur) or tava fry masala, depending on what you are using.

- Step 3: Add ginger-garlic paste and mix in until the raw smell goes away.

- Step 4: Add the spices.
If using, stir in the diced tomatoes and let them soften. Combine well, then add the potatoes and fry for 2-3 minutes to coat them in the spices. Add the okra and sauté until everything is well mixed. Season with salt, cover, and cook on low heat.

- Step 5: Add chopped tomatoes and let them soften.

- Step 6: Add bhindi(okra) and potatoes and mix well.
Be sure to open the lid occasionally and give it a gentle stir to prevent the okra from becoming slimy or overcooked. Once the vegetables are tender, sprinkle a little garam masala (check here how to make homemade garam masala) for added aroma and flavor (optional).
Finish with chopped coriander leaves. Serve hot with Rotis or phulkas, or steamed rice, and pair it with mashed eggplants made using the baingan bharta recipe

- Step 8: Bhindi aloo is ready.

Useful Tips
- To keep okra from turning slimy, wash it well and dry it thoroughly with a paper towel before cutting. Moisture is the main cause of sliminess, so make sure the okra is completely dry.
- Cut the okra into 1-2 inch pieces, and if you prefer, make a small slit on the top. This helps the spices seep in while cooking, though you can also leave them whole if you like.
- The potatoes are optional; feel free to omit them and prepare a simple, delicious okra-only stir fry with spices like the recipe for asparagus stir fry or cabbage thoran.
- Use amchur powder or tava fry masala sparingly to add just the right amount of tang. If you prefer a milder flavor, reduce the amount or skip the tomatoes altogether, as they can add to the tanginess.

Ingredients

Instructions
- Heat 3 tbsp oil in a deep bottomed pan
- Add cumin seeds and let it splutter
- Add asafoetida, onions and green chillies and sautée for a while
- Add 1 tbsp ginger garlic paste
- Add all the spiced powders turmeric, chilly, coriander and dry mango (amchur) powders
- Add diced tomatoes and cook well (optional)
- Mix it well, add the potatoes fry for about 2 to 3 minutes
- Next Add okra, fry it for a while until combined wellAdd salt to taste
- Close the lid and cook on low steam
- Make sure to open the lid and keep stirring in between so that it does not get slimy and overcooked
- After it is cooked, sprinkle garam masala(optional)Add chopped coriander leaves
