Bring water to boil in a large pan with a little salt and few drops of oil.
Add Pasta and cook till it is al-dente.
Drain into a colander and run it in cold water to stop cooking process and keep aside.
To make Alfredo sauce
In a pan heat up the butter fry chopped garlic if using and keep aside .
Add about 3 tbsp of all-purpose flour to the butter and saute well.
Add the remaining all-purpose flour to ¼ cup of cold milk and stir well so it is lump free.
Pour the milk mixture into the pan along with rest of the milk and bring it to a boil till it thickens.
Add whipping cream, cream cheese if using along with sauteed garlic, black pepper, oregano and salt and cook well
Once it is cooked well and of the right consistency you like , add the cooked pasta .
Add shredded mozzarella cheese just before switching off the heat .
Garnish with shredded parmesan cheese.
Serve with grilled chicken, garlic bread or a salad.
To make grilled chicken
In a heavy cast iron skillet or deep bottomed pan heat up some oil.
Add the chicken breast and cook on both sides till it is well done.
Later cut it up into small pieces and serve along side the pasta or mix it in the alfredo sauce .
To make garlic bread
Add melted butter, chopped garlic, parsley and garlic salt in a small bowl and mix well.
Lather this mixture onto the bread generously .
Heat up the oven to 350 deg F.
Bake for about 8 to 10 minutes .You can broil for 2 minutes to get a nice browned top.
Serve the Pasta with chicken and garlic bread on the side .
Notes
Use cold milk when mixing AP flour to milk separately and ensure there are no lumps.
You can skip whipping cream and cream cheese if you do not like your sauce to be too thick. The AP flour and milk make a nice thick sauce , add mozzarella cheese in the end.
Addition of spices like oregano, garlic powder, black pepper and red chili flakes are optional and you can choose to add what you like to make it your own.
Serve along with garlic bread, sauteed chicken, blanched broccoli, roasted veggies like asparagus and salad .
