Today’s Citrus Olive oil cake recipe is a must-try, heavenly and delicious one. I was first introduced to the Citrus Olive oil cake recipe by my colleague at work, a couple of years ago. Those days, I had never tried baking a cake from scratch. At most, I baked using ready-made cake mixes or ordered one from the bakery for occasions. The thought of baking a cake from scratch was somehow intimidating. Another similar recipe of Citrus Olive oil cake that I was inspired by, do check it out as well.

I had heard from friends “Once you bake from scratch, you will never go back to the cake mixes.” Like they say “As long as you know to bake, life is sweet ” and “Happiness is having a self-baked cake.” How true! I had saved this recipe and so glad I did. I finally attempted it a couple of months ago and have already made it three times thereafter. It comes out just perfect every time, and therefore a fail-proof recipe. You can choose to frost it with powdered sugar (confectioners sugar)

Key ingredients of the Citrus Olive oil cake recipe

The citrus taste from the orange and lemon zest, with a hint of finely chopped rosemary, takes it to the next level and makes it an extraordinary cake. If you are not fond of strong citrus flavors, this is a good choice! It does not have an overpowering citrus taste. This cake has the right balance of citrus from the zest, spice of the rosemary, and just the right amount of sweetness.

The aroma of the cake while baking is awesome. It fills up your home with a nice citrus fragrance. It is not too sweet as well. Using oil instead of butter makes it a light cake. The original recipe uses olive oil. I substituted it with vegetable oil and did not find any difference. This can be had as a tea or coffee cake just by itself. It can also be served with strawberry compote and a drizzle of olive oil to taste even better.

Cake Preparation Steps

In the preparation of this cake, the zest of orange and lemon, along with finely chopped rosemary is rubbed with sugar, using your fingers. Doing this brings out the fragrance and moisture in it. This fragrant sugar is then beaten with three eggs, kept at room temperature, till it turns pale yellow. Later the milk and oil are incorporated. Lastly, the all-purpose flour is added and slowly mixed in with a spatula. It is a pretty easy cake to bake with simple ingredients and can be ready in a very short time.

The cake can be dusted with icing sugar after cooling and served as is. You can get creative and dust it with molds on the cake, to get various shapes and make it look pretty. It can also be served with compote and fruits on the side. Hope you try this cake and am pretty sure you will love it, and be tempted to make it again and again!

A delicious cake made with olive oil and a citrus flavor with orange , lemon zest and rosemary that is so irresistible.

  • 1 1/2 cups all purpose Flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 3 eggs
  • 1 orange zest
  • 1 lemon zest
  • 7-8 rosemary leaves chopped finely
  • 1/4 cup milk
  • 3/4 cup olive oil or vegetable oil
  • 2 tbsp confectioners sugar for dusting (optional)
  1. Preheat oven to 350 deg .Line up the cake pan with parchment paper and spray it with oil.

  2. In a bowl ,combine all-purpose flour, baking powder and salt , whisk and keep it aside.

  3. Add sugar to a bowl. Add the zest of orange and lemon along with rosemary to the sugar.

  4. Slowly rub the contents with your fingers , until the sugar gets moist and fragrant.

  5. In a stand mixer, add three eggs and the sugar with the zest and beat on medium speed for about 5 minutes or until it turns pale yellow.

  6. Next add milk as it is beating and then add in the oil and mix well.

  7. Lastly , add all purpose flour that was set aside .Mix using a spatula until it is just about incorporated. Do not over mix.

  8. Pour the batter into the cake pan and bake it at 350 deg F for 35 minutes. A wooden skewer should come out clean , when inserted in the cake.

  9. Cool on the cooling rack and cut into big slices. Dust with confectioners sugar if you like. Enjoy.

    “A fail-proof recipe,” ahhhh…. I really like the sounds of where this is going, Nisha! 😁 Seeing as how my skills are largely untested in the baking world, I just might need some of your fail-proof magic coming my way, because this cake looks absolutely delicious!! Citrus is a weakness of mine, especially when it marries the sweet and tangy together so nicely.
