    Carrot Halwa Pudding or Gajar ka Halwa is a delicious dessert for any occasion or celebration. This is usually loved by one and all and is very simple to make. We all know the great benefits of carrots. It is also a good way to get picky kids and eaters to have carrots in their diet.

    Why is Carrot Halwa loved so much?

    This delicious dessert can be served with a dollop of ice cream and garnished with nuts of your choice and tastes heavenly.

    Ingredients needed

    We need a handful of ingredients to make this halwa:

    Grated carrots - Use a food processor for this. The effort in this recipe is grating the carrots, use reddish carrots for this recipe.

    Reduced Milk - Milk boiled in the microwave for twenty minutes. Whole milk will make the dessert tastier.

    Sugar - Use as needed, if the carrots are already sweet you may want to reduce it.

    Fried nuts - Use cashews, pista, and raisins roasted in butter or ghee

    How to make Carrot Halwa (Pudding)?

    We start making the Carrot pudding by grating and sauteeing the carrots in butter and boiling it with milk. Reducing the milk in the microwave for this recipe is a trick I recently learned. It not only saves cooking time and mess but also avoids babysitting the carrots and milk while cooking. It is also the best way to prevent the carrots from getting completely mushed up. Later add sugar and incorporate. Add fried nuts and garnishes at the end. If you have some carrots and milk lying aside do try out this delicious dessert and impress your holiday guests.     Ingredients

    • 2 cups carrot shredded
    • 2 cups milk
    • 3 tbsp butter unsalted
    • ¼ cup sugar granulated
    • 1 pinch cardamom powder from 3 to 4 pods
    • 12-14 cashew chopped bits and almonds

    Instructions

    • Microwave milk in a microwave safe bowl for about 20 minutes and reduce it.Check every 5 minutes.
    • Roast cashews and almonds and set them aside.

    • In a heavy wide pan ,heat the butter and saute the shredded carrots for 10 minutes or until they become soft and change color .
    • Add the reduced milk and cook for another 10 minutes until most of the milk is absorbed.

    • Add the sugar and cardamom powder and keep stirring until the butter leaves the sides of the pan.

    • Garnish with chopped nuts .The Carrot Halwa (pudding) is ready to serve .
