Ingredients you need to make the crab masala
- Soft-shell crabs or blue crabs are preferable, but you can use any variety, such as Alaskan or snow crabs.
- Ginger and Garlic paste - Make a fresh paste with a 1:1 ratio for fresh flavors. I also like to use fresh, crushed ginger, garlic, and green chillies, crushed in a pestle and mortar along with the finely ground paste.
- Onions, red ones, preferably cut lengthwise.
- Spices like turmeric, red chili powder, coriander powder, garam masala, and black pepper.
- Tomatoes are made into a paste or chopped finely.
- Green chilies, curry leaves, and coriander leaves.

How to make crab masala curry?
Cleaning crabs can be cumbersome, and I usually prefer to clean them at the fish market, even if it means spending a few extra bucks. If you are comfortable cleaning them at home, that works just as well. Once you have the cleaned crabs, cooking them is a very simple process.
The cooking process involves sauteeing the long, thinly sliced onions, green chilies, and ginger-garlic paste. Once they are cooked, soft and ooze out oil, we are ready to add the spices.

- Step 1: Heat oil in a cast-iron pot and sliced onions and cook until they wilt a little.

- Step 2: Add freshly ground ginger, garlic, and green chili paste along with fine ginger-garlic paste.
Add turmeric, red chili powder, coriander powder, black pepper, and fresh homemade garam masala at the very end. To this, add tomato paste and keep cooking until it is well incorporated.

- Step 3: Add spices and sautee well.

- Step 4: Add ground tomato paste and cook until the oil oozes out.
Add the cleaned crabs and about 2 cups of hot water, and cook them with a lid on. Keep stirring from time to time. It will be well-cooked in 40- 45 minutes. Garnish with curry leaves and chopped coriander leaves.

- Step 5: Add the cleaned crabs and mix well. Then add about two cups of hot water. Cover and cook.

- Step 6: The crabs will be cooked in about 40- 45 minutes. Add curry leaves and coriander leaves.The gravy will reduce as it cooks, so keep checking from time to time and stir well.

What dishes to serve with Crab curry?
Crab curry goes best with white rice and can also go well with any of the South Indian breakfasts like Palappam made with Palappam recipe, Puttu, Pathiri, or roti. The flavors are so tempting that you may end up overeating. If there are leftovers, the curry tastes even better the next day as the masala absorbs well into the crab.

- Use a large heavy-bottomed or cast-iron pot to cook the crab so it has enough space to steam evenly and cook properly.
- Use a mortar and pestle to crush the ginger, garlic, and green chilies to get an authentic taste. A little ginger-garlic paste along with this can also be used.
- Add hot water while cooking to help the spices blend smoothly into the gravy and ensure the crab cooks evenly.
- Do not skip the garam masala at the end, as it adds a wonderful aroma and finishing flavor to the dish.
- Cook on medium heat until the crab is fully cooked and the gravy begins to thicken, then increase the heat and fry the masala well for a richer taste.

Crab Masala Curry
Ingredients
- 10 crabs cleaned
- 2 large onions cut lengthwise
- 2 tbsp ginger garlic paste
- 1 inch ginger
- 3 cloves garlic
- 3-4 green chilies
- 2 medium tomatoes paste or diced
- 1 tsp turmeric powder
- 2 tsp chilly powder Kashmiri
- 4 tsp coriander powder
- 1 tsp pepper powder black
- ¼ tsp garam masala
- 2 green chilies
- 2 curry leaves sprig
- ¼ cup coriander leaves
- salt to taste
- 4 tbsp coconut oil vegetable oil
Instructions
- Clean the crab with salt and water.
- Heat 3 tbsp oil in a deep bottomed pan
- Add onions and green chilies and sautée for 10 minutes.
- Add ginger-garlic paste and fry till the raw smell is gone.
- Add all the spices except garam masala and mix well
- Add tomato paste and sautée till it leaves oil on the sides of the pan.
- Simmer for a while
- Add the cleaned crabs and sautee until it gets coated with the gravy
- Add a cup of water, salt to taste and cover with a lid, and boil
- Let it cook well for 15 to 20 minutes
- Add curry leaves
- After it is cooked, open the lid and increase the flame
- Cook for another 20 minutes or until well done and gravy is thickened.
- Add garam masala and mix well
- Add some more curry leaves and coriander leaves
- Garnish with chopped coriander leaves
