    Cauliflower and Potato

    This cauliflower and potato, or aloo gobi sabji, is one home-cooked dish that is so simple and comforting. It's a staple in my kitchen, making a weekly appearance without fail. What is amazing is the versatility of cauliflower dishes when prepared just right; it takes on a depth of flavor and heartiness that can easily stand in for meat. It’s proof that plant-based meals can be just as satisfying and flavorful as any traditional entrée.

    Ingredients Needed

    • White or Yellow Potatoes, skin peeled and cut into small cubes
    • Cauliflower florets washed and cleaned
    • Ginger garlic paste
    • Garlic chopped
    • Tomatoes - Chopped finely or paste
    • Spices - Turmeric, Red Chili Powder, Coriander Powder, Dry Mango Powder, and Garam Masala
    • Mustard and Cumin seeds

    How to make Cauliflower and Potato with Spices?

    We start by heating the oil and spluttering mustard and cumin. Next, add asafoetida and garlic and cook for a while without burning the garlic. Later, add onions and ginger-garlic paste. All the spices in the ingredients go in next.

    Add tomato paste (made by grinding tomatoes) or finely chopped tomatoes. When it leaves oil, add cauliflower and potatoes and cook covered till they are cooked well. Add chopped coriander leaves and curry leaves.

    1. Step 1: Heat vegetable oil and temper mustard, cumin, and garlic.

    1. Step 2: Add chopped onions, green chilies, and saute.

    1. Step 3: Add the ginger-garlic paste and saute until the raw smell goes away. Add spiced powders and mix well.

    1. Step 4: Add tomato paste and continue to cook well.

    1. Step 5: Add potatoes and sauté well.

    1. Step 6: Add cauliflower and mix in, add curry leaves
    1. Step 7: Cook covered and let it steam on a low flame for 15 to 20 minutes or until well-cooked.
    1. Step 8: Add garam masala, chopped coriander leaves, and switch off the flame.

    Useful Tips

    • Dry Mango Powder gives a special tangy taste to potato dishes, and this is available by the name Amchur powder. It is easily available in Indian groceries. Another spice that can be used in its place is the Tava Fry Masala, which also has a similar taste.
    • Garam Masala(How to make Garam Masala recipe at home) is another spice that enhances the flavor of this dish. This is added at the very end of cooking.
    • Another way to prepare the dish is to blanch the cauliflower and potatoes in hot water until they are partially cooked. Then, drain them well and add them to the onion-tomato gravy with spices to finish cooking.

    How long can aloo gobi stay fresh in the refrigerator?

    When stored in an air-tight container, Aloo gobi or cauliflower and potato can last up to a week and longer when frozen.

    Why does my aloo gobi turn bland?

    Cook the dish on a low flame and cover so that all the liquid within is released; do not add any additional water for cooking. The addition of chopped garlic in the beginning and cooking on a low flame enhances the taste of this dish.

    What to eat with aloo gobi?

    This is best eaten with wheat bread or roti, or paratha and rice.

    Ingredients

    • 1 large Cauliflower cut into florets
    • 1 medium Onion diced
    • 2 medium Potatoes cubed
    • 2 small Green chillies Thai slit
    • 1 medium Tomato diced
    • 1 tbsp Ginger garlic paste
    • ½ tsp Turmeric powder
    • 1 tsp Red chili powder Kashmiri
    • 3 tsp Coriander powder
    • 1 pinch Dry mango powder
    • ¼ tsp Tava Fry Masala (optional) not needed if dry mango is used
    • ¼ tsp Garam Masala powder
    • 1 tsp Salt
    • 1 tsp Cumin seeds
    • pinch of Asafoetida
    • 2 tbsp Vegetable oil
    • ½ cup Coriander leaves chopped
    • 3-4 Curry leaves

    Instructions

    • In a deep bottomed pan, heat oil
    • Add mustard and let it splutter
    • Add cumin and asafoetida
    • Add chopped onions and green chillies and sautee well.
    • Add ginger garlic paste and sautee till the raw smell goes away.
    • Add the diced tomatoes (or paste) and sautee till it leaves oil from the sides.
    • Add the spices turmeric, red chilly powder, coriander powder, dry mango powder and garam masala and mix well.
    • Add the potatoes , cauliflower , salt and coat them together with spices .
    • Close with a lid . Cook on medium heat till it is well done.Add curry leaves if desired.
    • Garnish with chopped coriander leaves.
    • Cauliflower and Potato with spices is ready to be served!

        Thank you for the comment and stopping by! You can skip this ingredient from this dish and it won't make much of a difference .Asafoetida is a gum latex derived from a giant species of fennel. It has an unique and unpleasant strong smell which mellows when cooked.I do skip it sometimes as well.
