Chocolate truffle cake with ganache frosting, chocolate desserts, and posts of other delicious desserts have been popping up on social media and all around in the past few days. It is Valentine's Day month to indulge in chocolates and desserts guilt-free! I wanted to do my bit for the special day coming up. Not that I need any excuse to make a dessert. I have always wanted to try to make a chocolate truffle cake with chocolate ganache frosting. Ganache is a fancy name given to chocolate and cream and it has a glaze-like look used to frost cakes.

- Cocoa Powder - use the best quality, unsweetened, and natural.
- Baking Powder
- Eggs Room temperature
- sugar and salt
- Milk, oil, and Vanilla Extract
- Whipping cream
- chocolate chips
- Butter
How did I make Chocolate Truffle cake with Ganache frosting?
After reading through many recipes from various sources, I arrived at my version of this delicious chocolate truffle cake. I was quite happy with the results. It needs some effort and time especially for frosting as it involves making two versions of the ganache, a thick one for the crumb coating, and a thin version for pouring in the end to get a glaze effect.
Baking the chocolate cake
We first start with making a regular chocolate cake, cool it, and level it. Make the chocolate cake by first beating eggs and sugar. Add oil and vanilla essence. Later add the combined whisked flour, cocoa powder, and baking powder in small additions and at low speed. Bake for 30 minutes at 356 degrees F. Sugar syrup or Chocolate sugar syrup (sugar syrup with cocoa powder in it ) is used to moisten the cake.
Make the Thick Chocolate Ganache
Use the thick ganache for frosting and making a crumb coat. This uses a 1:½ combination of chocolate chips and whipping cream. Frost the cake using this and refrigerate. Once it is crumb-coated, you can do another round of frosting to give a smooth finish.
Make the Thin Chocolate Ganache
Finally, pour the thin ganache on the cake. This uses a 1:1 combination of chocolate chips to whipping cream and a little butter which gives the glaze. Pour the thin ganache in such a way that it covers the entire cake. Any dripping can be collected in a plate and poured again. Decorate and Frost with the choice of your fruits, candies, or sprinkles.
Useful Tips
- Tips for a smooth glaze - The glaze could have been a little more smoother for my cake. The reason it was not perfect was, that the cake got some loose crumbs as I poked some holes with a fork for the sugar syrup to seep in. The fix is to add some extra thick ganache frosting and smoothen it out before pouring the thin ganache. There's always a next time to perfect it.
- When pouring the thin ganache, keep the cake elevated on a stand and a plate to collect the drippings in the bottom so the extra ganache that spilled out can be reused.
- Use butter in the thin ganache preparation for a smooth glaze effect.
- Use the best quality and best-tasting chocolate chips and cocoa powder when baking this cake for a great taste.

Chocolate Truffle Cake
Ingredients
Chocolate Cake
- 1 cup All purpose Flour
- ⅓ cup Cocoa Powder
- 1 tsp Baking Powder
- 3 eggs Room temperature
- 1 cup sugar
- ½ tsp salt
- ⅓ cup milk
- ¼ cup oil
- 1 tsp Vanilla Extract
Sugar Syrup
- 1 ½ cup water
- ½ cup sugar
Thick Ganache for crumb coating
- 1 cup chocolate chips baking
- ½ cup whipping cream
Thin Ganache for glaze and frosting
- 1 cup chocolate chip baking
- 1 cup whipping cream
- 1 tsp butter
Instructions
Chocolate Cake Preparation
- Sieve the All purpose Flour, cocoa powder, salt and baking powder into a bowl so that there are no lumps
- Using the mixer and beat the eggs for about a minute till they are pale yellow.
- Add sugar and beat for about 5 minutes or until you get a ribbon like stage when you lift the whisk .
- Add oil and vanilla extract.
- Add flour and cocoa mixture in 3 or more additions and gently mix with a spatula.
- Evenly distribute the batter to two 8 inch round pans which are greased and lined with baking sheets.
- Pre-heat to 356 degrees and bake for 30 minutes or until a tooth pick inserted comes out clean.
- Cool the cakes on a cooling rack.
Make Sugar syrup
- Heat sugar and water until dissolved . Cool it .This will be used to spray on the cake wile assembling and frosting.
Thick Ganache Preparation
- Heat the whipping cream until it is just about to boil .Take care not to burn.
- Pour this warm cream into the bowl containing the chocolate chips , close with a lid and wait for about 3 minutes to let it sit .
- Using a whisk gently mix until it is smooth with no lumps.
- Cool in the refrigerator for about 2 hours and this will thicken.
Cake Frosting
- Make sure the cake layers are even and poke some holes with a fork if necessary
- Sprinkle the sugar syrup generously on both the cake layers and wait for 2 minutes
- Add frosting of the thick ganache on the first layer. Keep a cup of hot water to dip the spatula in case you are not able to spread it easily.
- Place the other layer of cake , sprinkle the syrup and frost again.
- Cover on all sides to get a thin coating.
- Refrigerate for about 30 minutes
Thin Ganache Preparation
- Heat the whipping cream until it is just about to boil .Take care not to burn
- Pour this warm cream into the bowl containing the chocolate chips , close with a lid and wait for about 3 minutes to let it sit .
- Add the butter
- Using a whisk gently mix until it is smooth with no lumps.
- Pour the thin ganache on the cold cake and let it spread evenly. Tap the container so it is levelled.
- Make sure the thin ganache is evenly spread.
- Refrigerate for another 30 minutes
- Frost and decorate with sprinkles. strawberries, chocolate chips or anything that you desire. Enjoy!
