How to make homemade Fajitas?
The main features of this meal are the sautéed chicken, bell peppers, onions, and the tomato rice. Keep everything else, like creamy avocado, salsa, sour cream, and cheese, ready ahead of time. You can also add salsa and black beans; check the recipe for the salsa and black beans here.
For the best flavor, cook the marinated chicken in a cast-iron skillet if you have one. The high heat helps create a delicious sear and adds extra flavor. Once the chicken is cooked, transfer it to a paper towel-lined bowl. Using the same skillet, sauté the bell peppers and onions in the remaining oil over high heat until they are tender, lightly caramelized, and slightly charred.

- Step 1: Chop all the veggies, like bell pepper and onions, lengthwise.

- Step 2: Cut the cleaned chicken into small pieces and marinate it with the seasonings.
Sautee chicken with a little oil in a skillet. When cooked, drain and keep it aside. Next sautee the veggies. Add the cooked chicken back to the skillet, squeeze fresh lime juice over the mixture, and toss everything together.

- Step 3: Sautee the marinated chicken in a cast-iron skillet. When done, drain and keep aside. In the same skillet sautee veggies.

- Step 4: Add in the cooked chicken and squeeze some lime juice. Transfer to a serving bowl and keep it aside.
One of the most popular side dishes served with fajitas is Spanish rice, and it's pretty easy to make. I typically use Basmati or long-grain white rice for this recipe, the one we used in making ghee rice, pudina pulav, and vegetable biryani. Start by sautéing chopped onions and garlic in a little oil until fragrant. Add the rice and cook for a few minutes, stirring frequently, so the grains are lightly toasted.
Next, stir in tomato sauce, salsa, or chopped tomatoes and cook for another minute. Add chicken broth, vegetable broth, or water, using twice the amount of liquid as rice. Bring it to a boil, then reduce the heat, cover, and cook until the rice is tender and the liquid has been absorbed.

- Step 5: Sautee rice with onions, garlic, and green chillies.

- Step 6: Add water, chicken, or vegetable broth, and cook until done.
Cook till done and garnish with chopped green onions.

- Step 7: Rice is garnished with chopped green onions.

- Step 8: Assemble and serve! Layer the tortilla, add chicken, rice, chopped veggies, avocado, sour cream, salsa, or black beans.
Have all your toppings and sides ready before serving so everyone can enjoy the fajitas straight from the sizzling skillet. The popular sides that can be used for fajitas are avocados, sour cream, shredded cheese, and grilled steamed corn.

Useful Tips
- The unique blend of spices makes this dish taste exceptional. I used chili powder, cumin powder, garlic powder, paprika, oregano, salt, and pepper.
- If you love your fajita spicy, you can increase the spices as per your liking. They also have ready-made Taco seasoning in the grocery stores. So if you prefer to use that, it makes the job even easier.
- Since I had the Taco seasoning handy, I added a little of that as well, along with the other spices. Alternatively, you can just use the spices mentioned if you do not have store-bought seasoning.
- You can skip store-bought Taco seasoning and just use the spices mentioned.
- Mix well so the spices are coated well on the chicken. Marinate it for about half an hour in the refrigerator.
- Use boneless chicken and marinate it for some time so the chicken gets a nice flavor.
- Do not overcook the veggies, just sautee so they have a nice crunch.
- Keep all the sides ready beforehand so you can enjoy the dish as soon as it comes off the skillet.

Ingredients
Chicken and Seasoning
- 1 lb chicken boneless cut into small bites
- 1 tbsp Chili powder
- 1 tsp Cumin powder
- 1 tsp Garlic powder
- ½ tsp Paprika
- ½ tsp Oregano
- 1 tsp Salt
- 1 tsp Pepper
- 3 tbsp Taco seasoning store-bought (optional)
Grilled Veggies
- 1 red bell pepper cut into long strips
- 1 green bell pepper cut into long strips
- 1 yellow bell pepper cut into long strips
- 1 red onion cut into long strips
- 1 lime
Sides to go with Fajitas
- 1 cup Rice spanish
- 1 cup black beans
- 1 cup salsa
- 1 Avocado
- ½ cup sour cream
- ½ cup cheese shredded
Instructions
Chicken
- Marinate the chicken with all the seasonings mentioned in the ingredients or Taco seasoning for about 30 minutes.
- Heat a little oil in a cast iron skillet and sautee the chicken on high heat till it gets cooked well on both sides. Drain the chicken out into a bowl lined with paper towel.
- In the remaining oil add the onions and bell peppers and cook till they caramalize.
- Add the chicken back into the skillet and squeeze juice of a lemon . Mix well.
Sides
- Heat up the tortillas and layer with the cooked chicken and grilled veggies.
- Add sides of your choice like avocado, spanish rice, beans, shredded cheese and sour cream.
