Almond flour coconut oil chocolate chip cookie was a recent find for me.I had heard so much about almond flour from friends and blogger friends that I could not resist picking up a bag from the store. There are so many recipes out there that you can use almond flour with. So, I began my trials with it. The outcome of baking with it was simply awesome, the cookies and brownies especially had a wonderful soft texture. Everyone who had them liked and appreciated them! I would highly recommend baking with it.
Almond flour, as you may know, is a popular alternative to wheat flour, widely used in baking and cooking. For those who have not heard of it, almond flour is made using blanched almonds which are then peeled, dried, and powdered. It is especially popular being low in carbohydrates, rich in protein, fibers, and gluten-free.
The almond flour coconut oil chocolate chip cookie made using this recipe are a little soft compared to the ones made with regular all-purpose flour. They however taste really good. I’m usually not a cookie fan but this one is an exception and I can not seem to resist eating them :).They almost taste like an Indian sweet called ‘burfi’.It goes best with a cup of your evening tea or coffee. Delicious chocolate chip cookies made with blanched and powdered almond flour with toasted walnuts
- 1/2 cup butter softened to room temperature
- 1/4 cup coconut oil extra virgin (organic)
- 3/4 cup coconut sugar or brown sugar unrefined
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 cups almond flour
- 1 1/4 cup chocolate chips ghiradelli (or any other)
- 2/3 cup toasted walnut bits
Preheat oven to 350 degrees .Meanwhile get ready with a baking tray and line with a parchment paper
Cream the butter , coconut oil and coconut sugar till it is smooth using a stand mixer
Add the vanilla essence and eggs and make sure it is well incorporated
Add baking soda, salt and 1 cup of almond flour and mix well. Next add the rest of the almond flour one cup at a time and mix well
Fold in the chocolate chips and toasted walnuts with a wooden spoon or spatula
Use a cookie or ice cream scoop about 1 1/2 tbsp and bake for about 11- 13 mins
- coconut sugar can be replaced with brown sugar

September 14, 2018 at 2:45 pmThank you so much Diane, the main difference I noticed was that they are very soft and moist with a nutty flavor .The health benefits are also appealing .I would recommend trying it out once if you have not.The ones made with all purpose flour hold up well ,have their own unique taste so I guess it all depends on what each one likes.
