    These Almond Flour Chocolate Chip Cookies are soft, chewy, and packed with rich chocolate flavor. Made with coconut oil instead of butter, they have a nice, tender texture and a subtle hint of sweetness that pairs perfectly with the chocolate chips. While they're a little softer than traditional cookies made with all-purpose flour, their melt-in-your-mouth texture is exactly what makes them so irresistible.

    • A unique flavor twist - The combination of almond flour and coconut oil gives these cookies a delightful flavor that reminds me of the classic Indian sweet coconut burfi.
    • Perfect with tea or coffee - Whether you're enjoying an afternoon break or an evening treat, these cookies pair perfectly with a hot cup of tea or coffee. They almost taste like an Indian sweet called 'coconut burfi'.
    • Made with simple, flavorful ingredients - Coconut oil and brown sugar add warmth, richness, and depth of flavor, creating a cookie that tastes wonderfully different from the usual chocolate chip cookie.

    Ingredients needed

    • Almond flour, store-bought, is the main ingredient
    • Organic extra virgin coconut oil and butter
    • Brown sugar or coconut sugar, unrefined
    • Organic eggs
    • Vanilla extract, baking soda, salt, walnuts, and chocolate chips

    How to make Almond Flour Chocolate Chip Cookies?

    We start by creaming the butter, coconut oil, and coconut sugar or brown sugar.

    1. Step 1: Cream the coconut oil, butter, and coconut sugar.

    1. Step 2: The butter and sugar is creamed well.

    Once creamed, add the eggs and vanilla. Whisk the dry ingredients: almond flour, baking soda, and salt, and keep them aside. Reduce the speed and add the flour in 2 to 3 additions. Finally, add chocolate chips, walnuts, and any other add-ons that you like.

    1. Step 6: Scoop onto a baking tray lined with parchment paper and bake in a pre-heated oven at 350 deg F

    Useful Tips

    • Expect a softer cookie - Almond flour naturally contains more moisture than regular flour, resulting in soft and tender cookies. If you prefer a firmer, chewier texture, refrigerate the baked cookies for a short time before serving.
    • Use superfine blanched almond flour- For the best texture, use superfine blanched almond flour. Almond meal, which contains the almond skins, will produce a coarser texture and a darker-looking cookie.
    • Chill the dough for extra chewiness - While this step is optional, chilling the cookie dough for about 15 minutes before baking can help create a slightly chewier texture and prevent excessive spreading.
    • Coconut sugar can be replaced with brown sugar 
    • Do not overbake - The cookies will continue to set as they cool. Remove them from the oven when the edges are lightly golden, and the centers still look slightly soft.

    Ingredients

    • ½ cup butter softened to room temperature
    • ¼ cup coconut oil extra virgin (organic)
    • ¾ cup brown sugar coconut sugar unrefined
    • 2 large eggs
    • 2 tsp vanilla extract
    • ½ tsp baking soda
    • ½ tsp salt
    • 3 cups almond flour
    • 1 ¼ cup chocolate chips ghiradelli (or any other)
    • ⅔ cup walnut toasted

    Instructions

    • Preheat oven to 350 degrees .Meanwhile get ready with a baking tray and line with a parchment paper
    • Cream the butter , coconut oil and coconut sugar till it is smooth using a stand mixer
    • Add the vanilla essence and eggs and make sure it is well incorporated
    • Add baking soda, salt and 1 cup of almond flour and mix well. Next add the rest of the almond flour one cup at a time and mix well
    • Fold in the chocolate chips and toasted walnuts with a wooden spoon or spatula
    • Use a cookie or ice cream scoop about 1 ½ tbsp and bake for about 11- 13 mins

        Thank you so much Diane, the main difference I noticed was that they are very soft and moist with a nutty flavor .I would recommend trying it out once if you have not.The ones made with all purpose flour hold up well ,have their own unique taste so I guess it all depends on what each one likes.
