Ingredients
The marinade for the fried Tilapia or any other fish is very simple. Sometimes, the simplest ingredients are what make fried fish taste great.
- ginger garlic paste,
- red chili powder, turmeric powder, salt,
- curry leaves, shallots
- coconut oil
How to make pan-fried Tilapia?
Prepare a marinade by mixing ginger-garlic paste, red chili powder, turmeric, finely chopped shallots, curry leaves, salt, coconut oil, and a splash of water to bring everything together.

- Step 1: Thaw, wash, and clean the fillets with lemon juice and salt.

- Step 2: Make a marinade with the spices, curry leaves, ginger garlic paste, curry leaves, salt, oil, and water.
If using frozen tilapia, thaw it completely, wash and pat it dry. Generously coat the fish with the prepared marinade, ensuring each piece is well covered. Let it rest for at least 30 minutes to an hour so the flavors can fully infuse.

- Step 3: Marinate the fillets and let them rest for about 30 minutes.

- Step 4: Heat the coconut oil and cook the fillets by lining them in the pan.
Heat oil in an electric fry pan or a deep, heavy-bottomed pan. You can use coconut oil for an authentic flavor, or mix it with avocado oil for a balanced taste.
Once the oil is hot, gently place the marinated fish into the pan one piece at a time. Cover and cook on medium heat for about 5-7 minutes. Carefully flip the fish and cook the other side until it is perfectly cooked through, crisp on the outside, and tender inside.

- Step 5: Cook covered on medium heat, flip, and cook until done.

- Step 6: Transfer to a serving dish and serve!

Useful Tips
- Thaw properly for best results: Always thaw the fish completely and pat it dry before applying the marinade. This helps the spices adhere better and ensures even cooking.
- Adjust the spice level to your taste: Feel free to tweak the chili powder based on your heat preference. Using Kashmiri red chili powder is a great option as it has a vibrant color with a milder heat.
- Enhance flavor with optional spices: A pinch of fennel powder and fenugreek powder can add extra depth, but they are entirely optional.
- Choose the right oil combination: Using coconut oil gives an authentic Kerala flavor, while mixing it with avocado oil helps balance the taste and prevents the oil from smoking too quickly.
- Maximize marinade flavor: Tear the curry leaves and finely chop the shallots before adding them to the marinade. This helps release their natural oils and infuses the fish with richer flavor.
- Don't skip the marination time: Let the fish sit in the marinade for at least 30 minutes so it can fully absorb all the spices and flavors for a more delicious result.
