    Mango Sago with coconut milk is a refreshing tropical drink enjoyed by mango lovers and others alike. It is a great drink to cool off in summer, looks colorful, and is very simple to make. You will find this drink on many Asian cuisine menus and it is quite popular. I had seen this drink trending on Instagram for a while and it was on my list to try. Fresh ripe mangoes are in season these days and this was a perfect chance to try this delicious cooling drink.

    • It can be served as a refreshing drink and also as a thick pudding for dessert.
    • The sago gives a nice texture to this drink and tastes great.
    • Needs simple ingredients and very easy to make.
    • Feels like a tropical drink as it primarily uses mangoes, sago and coconut milk.
    • A variety of additions like mango ice cream , mango jelly can be added.
    • Great to serve to your guests and family.

    Ingredients needed

    • Fresh, ripe and sweet mangoes chopped into small pieces.
    • Sago cooked until translucent and drained.
    • Coconut milk canned can be used.
    • Any sweetener like condensed milk or honey or maple syrup.
    • Ice cubes, mango Ice cream, mango jelly, chopped mangoes or any other toppings .

    How to make Mango sago with Coconut milk?

    The original version of this drink only requires a few ingredients like cooked sago pearls, ripe mangoes, condensed milk or any sweetener, and coconut milk. All you need is to cook the sago pearls until they are translucent, drain, and cool them. Blend the coconut milk, condensed milk, or any other sweetener that you like to use and stir in the cooked sago. Chill and serve with chopped mangoes or any other toppings that you like.

    You can get creative and add any toppings like mango jelly, mango ice cream, pistachios or nuts, or even soaked basil seeds. Those folks not fond of coconut milk can replace it with regular milk and it would still taste great.

    I had recently made mango jelly and ice cream at home with the extra ripe mangoes as my kids are on a break from college and it is fun to cook and pamper them when they are around. I couldn't resist adding the jelly and ice cream to my version of the mango sago with coconut milk drink. It sure is a winner and turned out delicious. Don't forget to chill and add ice cubes before serving.

    Ingredients

    • 3 cup mangoes ripe and chopped
    • ½ cup sago
    • 1 cup coconut milk
    • 7 oz condensed milk or any sweetner to taste
    • ½ cup jelly mango flavored and chopped
    • ½ scoop icecream mango flavored optional

    Instructions

    • Wash the sago pearl and drain off extra starch
    • Boil water and add the sago.
    • Cook for 10 to 12 minutes until translucent.
    • Drain and keep aside. Wash off with cold water.
    • Blend mangoes, coconut milk and condensed milk into a smooth paste.
    • Adjust consistency to your liking .For thick and rich consistency add more condensed milk.
    • Assemble the drink by adding cooked sago pearls , top it with the blended mango.
    • Optionally you can add toppings like mango jelly or mango ice cream .
    • Garnish with chopped mangoes.
    • Chill and serve with ice cubes .
