    Asparagus stir fry

    Today's recipe share is Asparagus stir fry. We normally grill, roast, or bake asparagus. The recipe I have today is a simple Asparagus stir fry with very few ingredients like garlic and dried red chilies. This tastes good, the flavor that garlic lends to this dish makes it a favorite of anyone who loves garlic.

    There's an interesting fact about cleaning the asparagus. It has a hard stalk towards the end, and many prefer to chop off an inch from below before cooking. It is edible but removed to avoid the chewy taste. One can even peel off the skin at the bottom. I normally cut into a length of about two inches to prepare this dish.     Why you will love this?

    • This is one of the simplest side dishes to make and you can make it in no time.
    • It needs very few ingredients all of which are easily available in your pantry.
    • It goes with any main dish like rice, roti, or meat.
    • It tastes great and is good for you.

    Ingredients needed:

    • Asparagus that is cleaned and cut into desired length
    • Chopped garlic
    • Cumin
    • Dried red chillies
    • Avocado oil
    • Spices like turmeric
    • Salt as required

    How to make Asparagus Stir Fry?

    Once you clean and cut the Asparagus, saute it in a little oil with cumin, garlic, and dried red chilies. Add a little turmeric and salt if you like. That's all in the cooking process. Cook on low flame and cover with a lid until it is done cooking. You can also stop the cooking process earlier if you like a little crunch in your asparagus. Once done serve it into a serving bowl and enjoy!

    Ingredients

    • 1 bunch asparagus
    • 3 cloves garlic chopped
    • 2 red chillies dry
    • 1 tsp cumin
    • ½ onion diced
    • ¼ tsp turmeric powder
    • 1 tsp salt

    Instructions

    • Clean the asparagus by cutting 1 inch from the bottom and peeling off any hard skin 
    • cut into long pieces about 2 inches long
    • Take a pan with a little vegetable oil
    • Add cumin seeds
    • Add onions , garlic and dry red chillies and sautee
    • Add turmeric powder and then the asparagus
    • Add salt and stir fry 
    • Cover with a lid and cook till done. Take care not to overcook
    • Asparagus stir fry is ready to be served

      I love asparagus! Just picked my first garden batch of the year and it was a huge batch! I love that you put red chili’s in your recipe. I never thought about putting some heat into asparagus! Great idea!

      This sounds tasty . I never think of asparagus with my stir-fry. Instead, I would normally put broccoli, carrots and celery. I'll try it!
