    • You only need a few handfuls of ingredients, like the payar thoran recipe or cabbage thoran.
    • Very easy to make, just pressure cook all the items and add coconut milk.
    • Goes well with the Sadya feast, which is popular during the festive season and on occasions.

    • Coconut Milk
    • Coconut oil
    • Salt

    Olan Recipe Kerala Style - How to make?

    The main ingredients are ash gourd or white pumpkin, red azuki beans, green chilies, and coconut milk. I usually soak the azuki beans a day in advance and pressure cook them with ash gourd and green chilies for about 3 to 4 whistles till it is well done.

    Once the pressure releases, open the pressure cooker and add coconut milk, curry leaves, and a spoonful of coconut oil. Voila! That's all there is to it, and it tastes great. As you can see, it has very few ingredients, and the combination of ash gourd and beans blends in so well.

    1. Step 1: Add soaked azuki beans, green chilies, ash gourd, and salt in a pressure cooker and cook for about 3 to 4 whistles.

    1. Step 2: When pressure is released, open the pressure cooker and check for doneness.

    Ingredients

    • 2 cups ash-gourd
    • 2 cups azuki beans
    • 1 can coconut milk
    • 3 -4 green chillies
    • 1 tbsp coconut oil
    • 1 tsp salt

    Instructions

    • Soak the azuki beans overnight or for about 5 to 6 hours.
    • Pressure cook the beans with chopped ash-gourd and green chillies for about 3 whistles.
    • When the steam is released , add coconut milk and salt.
    • Add curry leaves.
    • Bring it to a boil .Add the coconut oil
    • Enjoy with rice or roti, best goes with sadya or Kerala feast.

      This reminds me of an Asian dessert that we have, except we don't use chillies in it. That must give it a nice kick.
