    Fresh Cranberry Muffin

    This Fresh Cranberry muffin recipe is so simple, that anyone can make them. It is a delicious muffin that everybody will love. The harvest for fresh Cranberries is at a peak in the autumn, especially from mid-September to mid-November. The cranberries are at their peak color as well. It is a good time to stop by the grocery and stock up on some of these tart berries.

    Why you'll love these muffins?

    • Cranberries are superfoods and are famously known for their antioxidant properties. They can be bitter and sour, so may be difficult to have by themselves. Adding them to bakes is a great way to incorporate them into your diet.
    • Cranberry muffins made of fresh, frozen, or dried cranberries are usually paired with orange.
    • This delicious recipe has walnuts, orange jest, and desiccated coconut flakes in it as well. One bite into these muffins and you will just love them.
    • They are easy to make and are great with your breakfast coffee and tea.
    • They are moist and light and taste great when out of the oven or warmed a little.

    As I mentioned earlier, Cranberry and Orange pair up well and are always a great combination, most muffin recipes you see online have this combination. You can add some walnuts and coconut flakes as well to get a bite and for a nutty flavor along with the tart. This recipe uses only oil, no butter, and eggs. That makes it moist and light as well.

    Add a little sugar to the chopped cranberries to soften them and let the juices out before adding to the batter. The original recipe calls for adding applesauce, but I added oil instead and it still turned out good.

    How to make a Fresh Cranberry muffin?

    First, chop a cup of cranberries to bitesize. Combine with sugar and mix well to let the juices out. Meanwhile, get all the dry ingredients out and whisk them. Whisk the wet ingredients in a bowl and mix well. Combine the wet into the dry ingredients and form a smooth batter gently without overbeating. Add the rest of the ingredients cranberries, walnuts, and coconut. Preheat the oven spoon the batter into the muffin tray and bake for 30 minutes.

    This can be had for breakfast or as a tea snack. It stays fresh for about 3 days if kept in a closed container. It can be refrigerated or frozen as well.     Ingredients

    • 2 cups All-purpose flour
    • 2 tsp baking powder
    • ½ tsp baking soda
    • 1 pinch salt
    • 1 cup orange juice
    • 1 tbsp zest orange
    • 1 cup cranberries cut into small pieces and mixed with 2 tbsp sugar
    • ½ cup apple sauce unsweetened you can replace with cooking oil as well
    • ¾ cup sugar granulated
    • 1 cup walnuts chopped and toasted
    • ½ cup coconut dessicatted

    Instructions

    • Line a muffin tray with muffin liners or spray a little oil
    • Pre-heat the oven to 350 deg F
    • Whisk all the dry ingredients all-purpose flour, granulated sugar, baking soda,baking powder and a little salt
    • Add in orange juice, applesauce (or oil) and mix until well combined.
    • Do not over mix .
    • Lastly fold in cranberries, chopped walnuts and coconut
    • Sprinkle sugar on top for a crunchy top
    • Bake for 30 minutes until a tooth pick comes out clean
    • Cool for a few minutes and enjoy

      These look scrumptious , I can have them everyday for breakfast , I love all the fresh citrus flavor and small bites of cranberries in the muffin.       What an amazing recipe, Nisha! I absolutely love those little wrappers you chose for these too. The colors make for a perfect combination of fun and flavor! Didn't I read somewhere that when it comes to eating food - we rely on all of our senses to decide whether we enjoy something or not? I don't see how anyone could resist these!

      I love the idea of pairing orange, coconut, and walnuts with the cranberries. YUM! It must be such a delightful pairing? The aroma of the orange is incredibly uplifting to our mood too. That's always nice, especially with everything going on right now.

        Yes rightly said Holly our senses play a big role in making the foods even more enticing indeed. These polka dot wrappers surely did the trick 🙂 So glad to hear you loved the pairing , I used a combination of recipes online and some from what I tasted when I went for training from work years ago and they had served fancy breakfast . I also think using the applesauce would have given this muffin a little more structure, I guess since I used oil so they were really soft . But then it is each once choice.       Mmmm these look good! I really like that it doesn't use butter either, which is a nice change for baking. Cranberry is a great anti-oxidant superfood but I never would have thought of it often being mixed with orange. Then again, I don't think I've actually had a cranberry muffin before (I'm a sucker for chocolate so that's where my tummy gravitates to!) Fab recipe and I love the cute red polkadot cupcake cases! xx

        Thanks for stopping by Caz and the comments. Yes, I can imagine chocolate muffins are just loved by most folks. But these are really good if you have not tried them before. The tart of cranberry, orange, and the slight sweetness from the juices and the nuts make it a great muffin indeed. The polka dot cupcakes are my kid's favorites as well 🙂 got them in various colors and they sure look appealing 🙂
