    Sabudana Vada (Tapioca Pearl - Sago fritters)

    Tapioca Pearl - Sago fritters more commonly called 'Sabudana Vada ' is a delicious deep-fried snack. I saw some of the awesome pictures online during the festive season recently and had to try making it at home. Usually, I use sago to make Sago khichadi (pilaf) and always have a stock of sago pearls at home. This recipe also is very easy to make.

    Why does this recipe work?

    • As we deep fry the sago fritters kids and adults usually love it.
    • It is very easy to make it once you have the soaked sago pearls.
    • Great for any get-togethers and parties.
    • This recipe is a no-fail one and turns out perfect every time.

    Ingredients

    • Sago washed and soaked for 3 - 4 hrs
    • Potato boiled mashed
    • Peanuts roasted and powdered
    • Cumin seeds
    • Green chilies finely cut
    • Ginger finely cut
    • Lemon squeezed and juiced
    • Salt
    • Coriander leaves chopped
    • Garam masala

    How did I make Sabudana Vada (Sago fritters)?

    Initially, I was hesitant to try making the fritters, as I was unsure how it would turn out, whether it would hold up well or crumble while frying. After watching a couple of recipes and instructions online, I was ready to make it. I was surprised that it was quite easy to make and tasted awesome!

    Tapioca is a rich source of dietary fiber, "good cholesterol" and protein and has many more vitamins and minerals. It is considered a favorite of many vegetarians as it is a pure starch food that is high in protein despite being a vegetable. Hope you are inspired to attempt making this dish if you have not already tried it!

    Wash sago thoroughly with cold water to remove all the starch. Soak it with just enough water for 3 to 4 hours. Drain the soaked sago into a colander and squeeze out all the water. Add cumin, chopped green chilies, ginger, mashed potatoes, roasted and powdered groundnuts, salt, and garam masala, and combine them. Add chopped coriander leaves.

    Mash well; it is okay to have some sago that is not mashed. Squeeze lemon juice into this mixture. Make small round patties and flatten them. Heat oil in a pan. Deep fry the patties until they get a nice golden brown color. If you are calorie-conscious and want to avoid deep-frying, do try the air-fried sabudana vada, which also tastes equally good. Some other deep-fried items that can be served as appetizers that you may love are potato beetroot cutlet, chana dal vada (parippu vada), and sweet dahi vada.

    Ingredients

    • ¼ tsp garam masla

    • Add chopped coriander leaves. 
    • Mash well, it is okay to have some sago which is not mashed. 
    • Squeeze lemon juice into this mixture.

    • Heat up oil in a pan. 
    • Deep fry the patties until it gets a nice golden brown color. 
    • Serve with chutney or ketchup. Enjoy the delicious sago fritters with your evening tea!
