What is Kayappam and how is it made?
“Kayappam” is nothing but delicious sweet deep-fried banana fritters with jaggery. It is a common snack at my home, especially when there are overripe bananas lying around. It’s a perfect snack with that evening tea or coffee. The main ingredients are ripe bananas, all-purpose flour or wheat, jaggery (brown sugar). It tastes delicious and even better the next day, just like any sweets made out of jaggery.
Does Kayappam require baking soda?
This is quite easy to make as well. Baking soda used in this dish is optional and it is mainly to give that extra fluffiness especially when you want to make it quickly. I usually avoid using it and try to keep the batter a little longer to get the softness. The frying of these appams fills the house with such an awesome aroma and it’s hard to resist having them! A delicious appetizer or afternoon snack that goes well with your evening tea or coffee
Small Ripe bananas or ripe plantains are preferred, I have tried with the regular bananas and they taste okay as well. You can use only all-purpose flour or only wheat flour or a combination of all-purpose and wheat flour. I prefer the combination. A little rice powder is added to give that extra crispiness.
Ingredients
- 4 small ripe bananas mashed
- All-purpose Flour or Maida – 1 cup
- Wheat powder -1 cup
- Rice powder – 2 tbsp
- 7 to 8 pieces of brown sugar (jaggery)
- 1 cup of water
- A pinch of salt
- 1/4 tsp Baking soda (optional)
- 4-5 cardamoms crushed and powdered
Directions
- Boil a cup of water with jaggery and make sure it melts well.
- Once the solution is completely cooled, add the ripe mashed bananas.
- Add in the combination of flour and wheat, rice powder, and mix the batter well.
- Add the powdered cardamom, pinch of salt, and mix well again.
- Add baking soda(optional) if using.
- Let the batter sit for 1 to 2 hours ( or you can immediately use it as well.)
- Take a spoonful of batter and drop it in the oil and deep fry until dark or golden brown.
- Kayappam is ready. All you need is some tea or coffee to go with it!
