"Kayappam" is a delicious sweet fritter that is deep-fried and made with all-purpose flour, banana, and jaggery. It is a common snack at home, especially when overripe bananas are lying around. It gets its name from "Kaya" and "appam" which means bananas and pancake(or fritter as it is deep-fried) respectively. It's a perfect snack with your evening tea or coffee. The main ingredients are ripe bananas, all-purpose flour or wheat, and jaggery (brown sugar). It tastes awesome and even better the next day, just like any sweets made out of jaggery.

How to make Kayappam?
Kayappams are very easy to make and are made with sweet bananas, the riper the banana, the better will be the appam. we start with the jaggery solution, which is made with jaggery and very little water on small heat. Once cooled, add mashed bananas and all-purpose flour. Rice flour is also added to give a little crispiness. Add powdered cardamom for the nice flavor and aroma. The consistency of the batter should be medium, neither too thin nor thick. You should be able to use a big tablespoon pour small scoops and fry them.
Does Kayappam require baking soda?
Using baking soda in this dish is optional. It is mainly to give that extra fluffiness, especially when you want to make it quickly. I usually avoid using it and try to keep the batter a little longer to get the softness. The frying of these appams fills the house with such an awesome aroma and it's hard to resist having them! Useful tips to make Kayappam
- Use overripe bananas to make this dish, if you can get ripe plantains, that will help in getting the authentic taste.
- If using baking soda, add it just before frying the fritters in the oil.
- Heat the oil at a medium temperature as frying on high heat can get the kayappams to be burnt from the outside and uncooked from the inside.
- Add the rice flour to make the kayappams crispy.
- Some folks substitute all-purpose flour with wheat powder to make the kayappams, and they also taste great.

Kayappam - Sweet Banana fritters
Ingredients
- 4 small bananas ripe mashed
- 1 cup All-purpose Flour or Maida
- 2 tbsp Rice powder
- 7-8 tbsp molasses Jaggery (brown sugar)
- 1 cup water
- 1 pinch salt
- ¼ tsp baking soda optional
- 4-5 cardamom crushed and powdered
Instructions
- Boil a cup of water with jaggery and make sure it melts well.
- Once the solution is completely cooled, add the ripe mashed bananas.
- Add in the combination of flour and wheat, rice powder, and mix the batter well.
- Add the powdered cardamom, pinch of salt, and mix well again.
- Add baking soda(optional) if using.
- Let the batter sit for 1 to 2 hours ( or you can immediately use it as well.)
- Take a spoonful of batter and drop it in the oil and deep fry until dark or golden brown.
- Kayappam is ready. All you need is some tea or coffee to go with it!
