- They taste awesome and are great for a quick breakfast or snack with your coffee or tea, just like moist banana bread with walnuts or chocolate banana bread, or Kerala-style Christmas cake.
- Great for lunchboxes and also for gatherings and picnics, as they are easy to pack and carry around.
- The hint of coffee in the muffins gives it a special flavor and stands out from regular muffins. We also used it in the eggless chocolate cupcake recipe.

How do I make the easy banana nut muffin?
Gather all the ingredients and mix them in one bowl. Line the muffin tray with paper cups and fill the batter at least three-fourths way up for each. Bake and enjoy. Since there was a demand for both varieties of muffins with and without chocolate chips at home, I first added only the walnuts to the batter and later some chocolate chips.

- Step 1: Have all the ingredients ready, start with mashing bananas, add melted butter, egg, sugar, vanilla, and coffee.

- Step 2: Use a whisk or fork to mix the batter, then add the whisked flour, baking soda, and salt.

- Step 3: Add nuts and chocolate chips, and fill the paper cups with the batter halfway through.

- Step 4: Bake at 350 deg F for 20 to 25 minutes or until a toothpick inserted comes out clean.

- Step 5: Let the muffins cool in the tray and later on a cooling rack.

- Step 6: Serve and Enjoy!
The joys of the aroma that fills the home while baking these delicious muffins are just awesome. The addition of coffee in this recipe is optional, and you can skip it if you don't like the taste. We love the taste of coffee in it and think it makes it taste even better.
If you like snacks made with banana, and would like to try sweet fritters, Kerala unniyappam and Kayappam unda pori are quite popular and taste delicious.

Recipe FAQs
If you are storing it in an air-tight container at room temperature, it will stay fresh for 4 to 5 days.
Filling too much batter in each of the paper cups can cause the muffins to collapse. Do not undertake, and use baking soda that has not expired.
Do not overmix the batter after adding dry ingredients. Just use a fork or wood spatula to gently mix until combined.
